Dr. Paliyath specializes in biochemistry, related broadly to agriculture, food, and health. For the past 40 years, he has conducted research at institutions that include Indian Institute of Science, Bangalore, India; Washington State University (Institute of Biological Chemistry, Department of Horticulture), University of Waterloo (Department of Biology), and the University of Guelph (Departments of Horticultural Science, Environmental Biology, Food Science, and Plant Agriculture). His research has been focused on postharvest storage technologies for fruits and vegetables, and the nutritional influence of fruits and vegetables in preventing the development of chronic diseases. His research has delineated biochemical and molecular mechanisms for the action of bioactives that are important in chronic disease prevention. The discovery of unique nanostructures from fruits which function as nanodelivery systems has far reaching implications in agriculture, food and health.
